    Default Cach' ướp BBQ

    Có sis nào có công thức ướp BBQ ngon thần sầu hông, cho ILy xin đi.

    So far, Ily có cach' u*o*p' cua? chi. TM : Karo syrup + sesame oil + sa? + hanh` toi? + oyster sauce. Chỉ ướp gà ngon dã man, rất là thơm.
    However kỳ này Lỳ làm có sườn bò DH, có pork back rib, có chicken wings and drumstick, hổng lẽ ướp y chang nhau . So chicken thì ướp kiểu chị TM rùi , còn 2 thứ kia ướp sao? Please help! Thanks! BTW, ướp overnite là OK rùi há.

    Ily, sis mua cái sauce korean mà có pear với apple đó, ướp sườn bò ngon lắm. Lúc trước CM có post hình một lần, để lát tìm xem.

    Em có chai sauce ướp sườn bò DH cái gì mà Beef Kalbi Marinade chi đó, có hình trái Asian pear. Phải chai đó hông chị? Co' ướp thêm gì hông?

    Ily : sườn bò ĐH chị ướp theo kiểu của sis Apple bên VF bếp xài sauce Bulgogi chi đó bằm thêm củ hành , tỏi + chút đường vô thôi.
    Sườn heo thì làm kiểu Jane :

    PORK RIBS BBQ

    Ingredients:

    * pork ribs of your choice, i.e. either whole or St. Louis cut. Plan on 4 - 5 bones (amount) for each eater.

    * yellow onion (be generous), few heads of garlic, ground black pepper, salt, sugar, few bay leaves (the amount of each is up to your taste; but please be generous for extra flavor).

    * celery, parsley (optional), carrot

    * A big jar of Cattlemen's BBQ sauce or making the sauce from the scratch by yourself

    Preparation:

    Phase I:

    * peel off the silver membrane on the inside of the ribs (so that the meat will be more tender and easier to absorb spices) then cut the ribs into LARGE chunks.

    * boil a large pot of water, save room for the ribs, into this pot add chopped onion, crushed garlic, salt (good amount), pepper, sugar, chopped celery + carrot +/- parsley, bay leaves. Since you will discard this boiling water, do not worry about being heavy handed in adding the seasonings.

    ** When the water is boiled for few minutes, add the ribs (cut in large chunks, just for easy handling). Bring back to boil for about 15 minutes MAX., OFF the heat, cover the pot. Let cool.

    At this phase, the meat of the ribs will be getting tender, rich in flavor given by the boiling broth.

    Phase II (15 minutes before serving):

    * pour the BBQ sauce into a bowl, with a BBQ brush.

    * heat the BBQ HIGH HEAT, clean well, brush it with some oil soaked paper towels

    ** place the rib chunks on to the grill, LOWER the heat to medium, don't move them until the first side is well grilled (at this time, the ribs won't stick)

    ** flip the ribs over, do the same to the second side, THEN brush the upside with the BBQ sauce LIGHTLY.

    ** approx. 5 minutes later, flip the ribs over and brush the upside lightly with BBQ sauce.

    The ribs is now ready to be served, after resting on a warm tray for few minutes.

    TO SERVE:

    * cut between the bones, serve with few tablespoons of BBQ sauce; together with other dishes.

    Note: if you wish, prior to the BBQ, add few SOAKED wood chips to create smoke for extra dimension; but if you don't, the Cattlemen's sauce will provide the smoke flavor.

    Sauce Bulgogi mua chai khổng lồ trong Costco đó hả chị? Or chai nhỏ nhỏ trong chợ?
    Còn pork back rib có cách ướp hông? Hum ddo' em dda^u ranh~ ma` ddu*ng' phe^t' sauce . U*o*p' sa(n? rui` giao cho tia' chu' i. or my bro ddu*ng' nu*o*ng' BBQ thui .

    Ừ chắc là sauce đó đó, CM cho thêm tỏi và củ hành bằm nhuyển, tí tiêu và nước mắm tại ox nói sauce hơi ngọt. Cái hủ có hình trái asian pear và apple.

    Ily : chị kiếm ra cáchnướng sườn heo theo Jane rồi đó, bảo đảm ngon

    Chai Bulgogi nhỏ trong chợ HK có bán đó ,chai nhỏ vừa thôi không bự đâu , vừa đủ coat hết thịt xong trộn đều quăng vô tủ lạnh mai nướng.

    The Korean have the right idea: pears, apples are great tenderizers and providing great flavor. Thus, if you can minced some pears for the marinate.

    The use of Coca-Cola/Pepsi to marinate cheap meat is scientifically proven: it tenderizes the meat, it provides the caramelized tastes etc.

    BUT please do remember one thing: you eat meat for the taste of meat, amongst others

    dónt eat meat by just eating the SAME spices!
