    Default Tip for selecting the whole fish

    A fresh fish should be firm, shiny and sparkling. Any film or mucus on the fish should be transparent and glistening and the skin should be taut. Avoid fish with wrinkled skin.




    The eyes should look clear and be slightly protruding, although this can depend on the type of fish.







    The gills should be cherry-red and free of any white slime.


    The tail of a really fresh fish should not be dried out or curled up at the end.

    then for some reason, the next few pics are of salmon;

    HM cái tip này có lý lắm, mỗi lần mua cáR cứ không biết làm sao lấy cá còn tươi, lật tới lật lui mà sợ người bán cá chưởi[8D]

    Buying fish already cut up, unless by a good fish monger, is a waste of money in most cases; especially the fish is 10lbs or smaller.

    Headless fish is one indication of a not fresh fish (seller wants to cut the lost)

    Precut fish means higher chance for contamination and added labor cost.

    With a sharp chef knide, a serrated knife to cut through the bones if needed, and a kitchen scissors once can cut a fish up to one needs within few minutes; so why not?
