Baked Salmon:

* whole or chunk or fillets of good salmon; seasoned with olive oil + salt + pepper + lemon juice; 375F oven or grill for 10 minutes. If you have dill (thi` la`), you should use the dill as a bed then placing the salmon on top.

* served with a platter of mix herbs and vegetable of choice +/- rice paper . Sweet 'N Sour Dipping fish sauce.

Grilled Pork:

* pork country ribs or pork shoulder, sliced about 1/4 inch thick, across the meat grains.

* season the sliced pork with canola oil + minced lemongrass + minced shallot or the white part of green onion (OR a paste made of yellow onion and garlic, using a small food processor) + salt + pepper +/- a dash of sesame seed oil. Keep in the refrigerator or freezer.

* grill in a tray or on skews until cooked (high heat)

* serve with rice vermicelli, or bread, and herbs + lettuce.

remember to make a sweet and sour dipping sauce for this dish (fish sauce + sugar + rice vinegar + water or 7-UP + minced garlic + hot chilli).
