Baked Zucchini

Ingredients:

* zucchini
* bacon or por belly or pancetta
* onion (yellow, shallot)
* cheese of your choice (cheddar?)

Variations:

* minced shrimps

* left over baked fish?

* toasted nuts?

Preparation:

* quickly boil the zucchini in salty water for a minute or two

* soak in cold water

* cut length-wise and scooping out the meat, save

** saute' onion + minced bacon

then add the zuchini meat

** season with soy sauce or salt + ground pepper + lemon juice


*** fill the empty zucchini shell with the above + cheese topping

***** Into a hot oven (375F) for about 5 minutes;

to grill in order to melt the cheese.

Serve.
