* 1 cup of All Purpose flour
* 2 teaspoons of Baking Powder (or 1+ teaspoon of baking soda)
* 2 tablespoons of granulated sugar
* a pinch of salt (about 1/2 teaspoon)
* 1 or 2 eggs, lightly beaten
*add milk to the above mixture slowly to achieve the desired thickness (not too runny, but not too thick) DO NOT over mix the batter.

Use butter on a non stick pan, medium high heat. About 3 minutes per side; depending on the situation. Note it down your finding.

Note: if you have sourdough starter, add some to the batter, then leave the mix alone in a warm place for about 20 minutes before frying; it makes a great tasty pancake.
